One of my largest goals for the summer was to get lots of food prep done before the school year started. We love having fresh meals every night, but that does not mean that we do not utilize freezer cooking methods to make that possible. At the end of the summer, I have the following food prepared:
– bags of oatmeal ready for Cole to take to work
– bags of black beans, cooked and frozen in one cup bags
– chicken, raw
– ground beef, browned and frozen in one pound bags
– meals of ham and bean soup, cooked and ready to thaw
– bags of cheddar cheese, in one cup portions
– bags of mozzarella cheese, in one cup portions
– bags of Mexican cheese, in one cup portions
– pounds of gnocchi, baked and frozen in one meal portions
I also have been sure to stock ham, pork tenderloins, and roasts as they have been on sale. I have also made sure that our produce jar and shelf are as stocked as possible so that we have yummy produce available!

i’ve read before about freezing already-cooked ground beef. how long does it last? do you do anything to it besides bag it up after cooking? this could be a HUGE help during the week.
We’ve used it a year after cooking and freezing it! I do nothing but bag it and stick it in the freezer. I pull it from the freezer the morning that I want to use it and it thaws in the fridge while I am at work. It’s so great!

Wow, that’s a lot of meal prep! My husband’s a teacher, too, and I wish I’d had the foresight to do so much advance planning this summer…but at the same time, we’ve spent all summer moving/painting, so I don’t know when I would have done that!
At least mixing up some oatmeal packets would be a great idea, though.
