This week is looking like a super busy week, so I have planned a very simple menu with lots of shortcuts and early preparation built in:
Monday: homemade cheesy hamburger skillet, veggies
Tuesday: ham and bean soup with pasta (soup made, all that needs done is to cook the noodles)
Wednesday: homemade pizza (Cole makes this meal)
Thursday: ham and macaroni casserole (already made and in the fridge)
Friday: grilled cheese sandwiches (I won’t be home – this is Cole’s favorite when I am not home.)
Saturday: cheesy chicken and rice (crock pot meal)
Other ways I have helped to make sure this busy week will run smoothly:
– all laundry is washed, dryed, and put away
– the house is clean
– breakfast food has been prepared for the week
– we have produce and snacks prepared for lunches
– I have a simple to do list prepared for each day of the week to make sure that nothing gets missed
– prepared a great MP3 mix for my car – encouraging music really helps to focus my attitude!
I will be popping in here throughout the week to say hi, but it might be a little bit more quiet than usual!

Wow! You are very prepared! I am jealous – you always seem to have everything together and ready to go. Girl, you should publish a “how-to” book for staying positive, happy and organized!
