Uniform Dinner Rolls

We make most of our food completely from scratch. We believe this to be a healthier option for our bodies and have found it to be a necessity as I get horrible migraines after eating MSG (which seems to be in everything!)

I love making dinner rolls to freeze and thaw for meals on an as needed basis.

I want them to be a uniform size so that they freeze and thaw in the same way; however, I cannot seem to create uniform rolls on my own.

Instead, I make up my roll dough and cook it in sprayed muffin tins.

For large dinner rolls you can cook them in a regular sized muffin tin. My favorite is to make mini rolls in my mini muffin pan that I received as a wedding present. These small rolls thaw quickly and allow each person to determine how much bread they would like with dinner.

This simple little task has served to greatly simplify the process of making, freezing, thawing, and serving homemade rolls with our meals.

What recipe do you use for your rolls? What recipe books do you recommend for cooking MSG free?

Sounds like a great idea! I’d love more info too as we also bake most of our bread products at home. I freeze hamberger bun, but have never done dinner rolls or biscuits. It sounds like you cook them and then freeze…is that right?

Nothing beats the smell or taste of homemade bread!

  3. Do you freeze your dough, or do you bake them first? I would love to try your recipe–I, too, try to make all of our goods.

I agree about scratch cooking. We cook almost everything from scratch too, just because we feel so much better after eating it!

I have a friend who suffers from migraines from msg as well. I like the idea of baking dinner rolls in muffin tins. I’ll have to try it. I actually freeze the dough after I’ve made in into the rolls. Then I can grab how many rolls I need, let them thaw and rise at the same time, then bake.
