Menu Plan Monday :: July 23-August 3

This is my first time to participate in Menu Plan Monday which is hosted over at I’m an Organizing Junkie. As you can imagine, I love this organizing blog! I’ve read these posts on so many other sites and am excited to begin doing it on mine! I love menu planning and am working at planning our entire week including breakfast and lunches to make sure they are well-rounded and healthy.

Monday:
Breakfast: yogurt, tropical oatmeal
Cole’s lunch: spaghetti, herb roasted red potatoes, pears, chips
Vanessa’s lunch: sandwich, pineapple/papaya, milk
Dinner: one dish chicken dinner (trial), green beans

Tuesday:
Breakfast: yogurt, tropical oatmeal
Cole’s lunch: one dish chicken dinner, green beans, herb roasted potatoes, peanuts
Vanessa’s lunch: one dish chicken dinner, milk, green beans
Dinner: fried rice with veggies, hummus and flatbread

Wednesday:
Breakfast: yogurt, tropical oatmeal
Cole’s lunch: sandwich, fried rice, pears, chips
Vanessa’s lunch: salad, milk
Dinner: chicken strip wrap with veggies, hummus and flatbread

Thursday:
Breakfast: yogurt, tropical oatmeal
Cole’s lunch: chefs salad, pears, green beans, chips
Vanessa’s lunch: salad, milk
Dinner: our life group is making personal pizzas!

Friday:
Breakfast: yogurt, tropical oatmeal
Cole’s lunch: sandwich, side salad, pears, chips
Vanessa’s lunch: hummus and flatbread, milk
Dinner: feta and fruit salad

Saturday:
Breakfast: pancakes
Lunch: homemade veggie and hamburger pizza
Dinner: Caribbean black bean soup, chips and salsa

Sunday:
Breakfast: cereal
Lunch: chicken noodle soup
Dinner: leftover pizza

    Hi and welcome to MPM! Your menu looks yummy (and very well organized!) We also try to use up dinner leftovers for lunches, since it’s just the two of us. If you are interested, I often post recipes that are either sized or adaptable (with instructions for two) on my site. I’ve been cooking for just me and hubby for a number of years now, so I know it can be a challenge. Hope you enjoy your week!
